Blood Orange Muffins with Chocolate Chunks
I’ve mentioned many times before that I love Sundays that are full of leisure, several cups of coffee and the New York Times crossword puzzle. If I can stay in my pj’s all day, that is extra icing on the proverbial cake.
Breakfast last Sunday was scrambled eggs. I can’t eat scrambled eggs with plain toast or plain anything for that matter. I have to have something like muffins or coffee cake to make Sunday brunch feel special. As I am writing this, I realize that that sounds somewhat crazy. I’ll have to blame all the craziness on my sweet tooth.
I decided to make these blood orange muffins because I can’t seem to get enough of these oranges this season.
These muffins, from the WhiteOnRiceCouple blog, are very moist and the combination of orange and chocolate is delicious. They note that regular oranges or lemons make good substitutes for the blood oranges.
