Many people don’t eat fish because they are not sure how to cook it. This post will help you cook fish quickly and deliciously.
A lot of fish, such as the white fishes- cod, halibut and trout; and shellfish – scallops, shrimp and lobster, has a sweet delicate flavor. Sauces need to be equally as delicate an enhancement. Fish with brown butter sauce is the perfect choice.
All you need for this dish is the fish of your choice and butter. It’s so easy.
Begin by seasoning the fish with salt and pepper. Heat a small amount of butter in a sauté pan. Saute the fish just until in flakes. In the case of shellfish, cook shrimp and lobster just until it turns a light pink color. Scallops need about 1-2 minutes per side.
Remove the fish to a warm platter. Add 4-8 tablespoons of butter to the pan depending on the amount of fish cooked, and heat over medium heat until it is light golden in color. Return the fish to the pan so that it can absorb all that buttery goodness. You’re done; and you have a healthy delicious meal that took about 10 minutes to prepare.
Variations:
- Top the fish with chopped pistachios or chopped pecans.
- To the brown butter sauce add a squeeze of lemon juice or lime juice, some capers and chopped parsley. Pour over the sautéed fish.
- To one stick of melted butter, add 3 tablespoons of balsamic vinegar, 1 tablespoon of Dijon mustard and 1 tablespoon of honey. Pour the sauce over the sautéed fish.
- To the melted butter, add 1 tablespoon of chopped tarragon and 2 tablespoons of chopped walnuts. Pour over the sautéed fish.
