”I have been popping corn tonight, which is only a more rapid blossoming of the seed under a greater than July heat. The popped corn is a perfect winter flower, hinting of anemones and houstonias….By my warm hearth sprang these cerealious blossoms; here was the bank where they grew.” ~ Henry David Thoreau
Popcorn with Maple Glazed Bacon and Maple Syrup Glaze
As you all know, the Super Bowl is this Sunday. I willingly admit that I am not an avid sports enthusiast. That is probably an understatement because I’m not an enthusiast at all. For me, the super bowl is all about the food, the advertisements and a great bottle of wine all experienced in front of a nice fire.
This year I am very confused because this game is called the NY/NJ Super Bowl. For those of you who follow my blog, you know that I live in upstate New York. Here, the local sportscasters keep saying the game will be hosted by New York. The game is going to be played in New Jersey. How can two locales, albeit close in proximity, host this game? It sounds strange to me. Again, I don’t understand sports, or is this all about money?
I’ve spouted off for too long, so now on to the good part of the game…the food. My version of Maple Glazed Bacon Popcorn was inspired by the Feb/Mar edition of Fine Cooking.
Start the recipe by preparing my Savory Maple Glazed Bacon using three slices of bacon for every half cup of popcorn kernels popped. After baking, cut the bacon into bite size pieces and sprinkle with cayenne pepper.
Next, melt the butter in a small saucepan and add the maple syrup.
Air pop your popcorn into a large bowl. Pour the maple syrup mixture over the popcorn and toss together. Add the bacon and sprinkle with vanilla sea salt.
My husband said this popcorn was highly addictive. What should have served 4 people only served 2.

Regarding “My husband said this popcorn was highly addictive. What should have served 4 people only served 2.” Well, Pat did eat a little. But, I probably had 3 1/2 servings. A real diet buster
and really good.
