I think it has finally dawned on me that I am a pancake junkie. To make matters worse, I don’t intend to give them up; and I am going to share this addiction with you.
As Sunday approached, my cravings began. Visions of stacked pancakes dripping with syrup were dancing in my head. I even wondered where I could find sugar plums. Oh wait; I have several months before that craving arrives.
Moving on, at one point, so many of these sour cream pancakes were consumed that I decided to give the recipe a rest. The resurrection was a joyous experience. The sour cream provides moistness and richness; and the buttery orange sauce provides a sweet tanginess that melts in your mouth.
So, let’s get started by gathering the pancake ingredients.
Sift together the flour, baking powder, baking soda and salt. Then combine the sour cream and the milk in a small bowl.
In a large bowl, beat the eggs with an electric mixer set on high speed, until light and fluffy.
Stirring, alternately blend in the flour mixture and the sour cream mixture, beginning and ending with flour. Then stir in the melted butter.
Cook the pancakes, on a preheated griddle, using a little less than ¼ cup of batter for each pancake.
Serve with Orange Sauce.

In a 1 quart pan, place the butter, sugar and orange juice concentrate. Heat over medium heat until the sugar is completely melted and the sauce is bubbling.
Stack the pancakes and top with the Orange Sauce.

- 1 1/2 cups sifted all purpose flour, sifted
- 3/4 teaspoon baking powder
