A Simple Way to add Flavor

With grilling season upon us, one of the easiest ways to add flavor to grilled meats is with compound butters.

Compound butter is made by adding herbs, fruits, cheeses and other ingredients to soft butter.  The explosion of possible flavors is limitless.

One of the most basic butters is herb butter.  The following recipe for lemon, basil garlic butter adds extra flavor to any meat or fish.

Gather the ingredients.

Freeze until firm.  Slice off a round of butter and place onto the top of your grilled meat or fish.  This is also delicious on grilled corn on the cob.

Perfection!!!

Sweet compound butters are terrific on muffins and sweet breads. Check out the raspberry butter in a previous post for Lemon Poppy
Seed Muffins.  It is delicious.

Here are a few more compound butters that are worth trying.  You won’t be disappointed.

Sage Butter:

1 stick of unsalted butter, softened

¼ c. fresh sage leaves, minced

A pinch of salt and pepper to taste.

Combine the butter, sage leaves and salt and pepper in the bowl of a food processor.  Pulse until combined.   This butter is terrific with cornbread and fabulous on roasted vegetables.

Blue Cheese Butter:

1 stick of unsalted butter, softened

3-4 tablespoons of blue cheese

2 teaspoons of lemon zest

½ tsp. kosher salt

Combine all the ingredients in a food processor.  Pulse until combined.  This butter is fabulous on grilled beef.

Let your imagination create compound butters that are perfect for you.
