Pina Colada Popsicles Dipped in White Chocolate

I know that I have been fixated on ice cream lately , but tis the season.  Recently, the wine and liquor warehouse that I shop at had a tasting for Kenny Chesney’s new line of Blue Chair Bay Rums. I tasted the Bay Coconut and thought it was amazing because it had a great coconut flavor without being overly sweet.

I decided to make grownup Popsicles for my weekend guests using this rum. They were so delicious and perfect for the summer season.

Pina Colada Popsicles

To make these easy popsicles, mix the coconut rum, cream of coconut and pineapple juice in a blender.

Pour the mixture into your Popsicle mold and freeze overnight.

To release them, dip the Popsicle mold in some warm water for about 30 seconds. When the Popsicles release from the mold, place them on a cookie sheet lined with parchment paper. Refreeze until firm.

Meanwhile, melt the white chocolate and the coconut oil in a ball jar. Microwave on low until the chocolate is melted.  Stir to combine. Dip each Popsicle into the white chocolate mixture and then sprinkle on some toasted coconut.

Serve immediately.
