Open- Faced Salmon and Avocado BLTs
It’s summer time, when it is nice to have easy, healthy delicious meals. This sandwich meets all those requirements.
Now that homegrown tomatoes can be found at the farm stands and farmers’ markets, BLTs are a terrific way to enjoy a juicy flavorful tomato. They were a weekly occurrence during my childhood.
This recipe elevates the basic BLT with the addition of roasted salmon and sliced avocado. A tasty mayonnaise tops it all off.

NOTE: I chose to cook the bacon in the oven as shown in this post. I roasted the salmon in the oven at 375 degrees F. for 15 minutes.
